Garlic Sesame Shrimp Salad

Shrimp salad



Always having good salad makings in the fridge is key to a quick easy salad. A protein, some greens and a house made dressing. Store bought dressings can be okay for ease, but check the label to make sure its not all sugar!

Garlic Sesame Shrimp Salad
2 servings

1 lb shrimp, peeled and deveined and fairly dry
2 cloves garlic, minced
TBSP mirin or white wine
TBSP  refined coconut oil
1 cup red cabbage, sliced
1/2 cucumber, halved and sliced
Avocado, sliced
TBSP sesame seeds
TBSP coconut flakes
2 large handfuls greens (spinach, arugula)

Sesame Ginger Dressing

1. Heat a saute pan to high medium high heat. Add the coconut oil. Toss in shrimp and garlic, tossing until shrimp has just turned pink on both sides, maybe 5 minutes, then splash with mirin. Cook a couple more minutes, turn heat off and remove shrimp from pan with garlic and juices.
2. Arrange greens in bowl with your vegetables, shrimp and sprinkle coconut flakes and sesame seeds on top. Drizzle with your sesame ginger dressing. Enjoy!
