
- Peanut Noodles
Feel free to add beef or shrimp or tofu to this dish. Its a great dish to make ahead and have to snack on in the fridge!
Peanut Noodles with Vegetables
Serves 4
1 package soba or noodles cooked and ready
1 large carrot, chopped large
1 small sweet potato, chopped large
1 bunch baby bok choy, sliced thick
1 red pepper, cut into long strips
1 lime, juiced
Olive oil
Sea salt
Cilantro and or basil
For Sauce
½ cup peanut butter ( I use locally made Justin’s)
½ cup water
2 TBSP tamari
Tsp rice vinegar
Handful cilantro
Red pepper flakes, optional
- In a wok or large sauté pan, bring heat to med-high.
- Add olive oil and then carrots, stir and coat with oil then let cook a minute. Add remaining vegetables in same fashion, until they are all in. Turn down heat to medium, salt and squeeze lime juice over, cover for 5 minutes. Remove from heat.
- In a blender, add all sauce ingredients. Blend.
- Assemble noodles, vegetables and sauce. Garnish with cilantro and/or basil and lime wedges.
