I just ate at H-Burger in Denver, and am sooo stuffed as I sat down to write the last post in February. Hence a simple cucmber salad. You can pair this with some simple grilled or roasted chicken, a simple cooked fish and brown rice for a beautifully simple and flavorful meal. Or really beef up the salad with seaweed, red bell peppers, rice noodles, cilantro and a protien for a complete one dish meal.
1 European Cucumber, sliced in half lenthwise, then thiny sliced
1/4 cup toasted sesame oil
2 Tbsp rice vinegar
Tbsp sesame seeds, black sesame seeds can add great color
1. Combine all ingredients in a bowl.
2. Stir and eat! It is that simple.
