This dish is awesome to have around in the fridge for a snack, a side or even a light lunch. The quinoa is a complete protein, the mint and lemon keep it nice and fresh and you can add any vegetables you like!

2 cups cooked quinoa, cooled
1 cup edamame
½ cup red pepper, cut into small pieces
1 cup radishes, diced
1 lemon, juiced
½ cup olive oil
1/3 cup fresh mint (you can sub any fresh herb)
Sea Salt, to taste
1.Mix oil and lemon and salt.
2.Toss in edamame, peppers and radishes.
3. Mix well with mint, and serve!
