Justin’s Peanut Soup
This soup is so delicious. You can add chicken to make it a heartier meal, or keep it simple and smooth with just the vegetables. I use Justin’s Nut Butter for the peanut butter, it’s my favorite peanut butter, doesn’t contain any crazy ingredients to throw recipes off. Just peanuts and salt.
1 yellow onion, diced
3 cloves garlic, minced
1 sweet potato, diced pretty small
1 TBSP curry powder
1 12 oz can fire rst tomatoes
1 can coconut milk
8 cups broth, chicken or veg (careful if it has salt, do not then over salt)
1 cup smooth peanut butter
Handful chopped fresh cilantro
Sea salt
Olive oil
Chicken breast, cooked, shredded
1. Heat large soup pot to medium high and add olive oil. Toss in garlic and onions, cook for a few minutes until translucent, then add sweet potatoes. Let cook until sweet potato starts to brown, stirring as to not let it burn or stick to the pot.
2. Toss in curry powder, stir. Add tomatoes, coconut milk, broth and salt. Simmer for 20 minutes, with lid on.
3. Add peanut butter and either blend with hand blender, or wait until it cools and blend in blender. Reheat if it has cooled, add cilantro.
4. Add chicken and serve! You can also add crushed peanuts if you want to add some more texture.
