Menu on the Wall

I posted a menu on our new chalkboard wall in the kitchen for my husband. He posted in on Facebook. People started asking for the recipes… so I decided it was a good time to pick up the blog again. Some friends and I are starting to get together on Monday nights to cook some dishes to have in our fridge all week, so I will in turn post the recipes for all! I have been doing grain and vegetable salad type dishes that you can just add some grilled chicken or beef (or tofu!) to if you want to make it a full meal.

Mint Quinoa Salad

Vegetable Quinoa Salad with Mint and Lemon Dressing

2 cups cooked quinoa, cooled (about 1 cup dried)
1 cup edamame
½ cup red pepper, cut into small pieces
1 cucumber, diced
1 lemon, juiced
½ cup olive oil
1/3 cup fresh mint (you can sub any fresh herb)
Sea Salt, to taste

1. Mix oil and lemon and salt.
2. Toss in edamame, peppers and cucumber.
3. Mix well with mint, and serve!
